Whip up these healthy chocolate mint truffles with just 5 pantry staples: dates, nuts, cacao powder, nut milk and coconut oil. Naturally sweetened with dates, these little treats come together in just 5 minutes with the help of a food processor.
Follow these few simple steps:
Prep time: 5 min
Ingredients:
1 cup dried dates
1 cup raw, unsalted nuts (I like walnuts or pecans because of their soft texture and nutritional properties)
1 cup cacao powder (unsweetened)
2 tbsp nut milk (any kind you prefer, I personally like almond milk)
1 tbsp coconut oil (can be solid)
Steps:
- Add all ingredients to a food processor.
- Blend until the mixture starts to stick together and forms a dough-like “log”.
- Transfer the mixture to a bowl.
- Scoop out about 2 tablespoons at a time and roll into bite-sized balls.
These keep in the fridge for up to 14 days. Then transfer to the freezer. You can eat them straight out of the freezer as they still remain soft.
