🥕 Ingredients (Makes about 1½ cups of sauce)
  • 2 cups cherry tomatoes, halved

  • ¼ cup raw beets, diced

  • ½ cup red bell pepper, chopped

  • ½ cup carrot, peeled and chopped

  • ¼ cup zucchini, peeled and chopped

  • ¼ cup onion, roughly chopped

  • 1 garlic clove, peeled

  • 1 tbsp olive oil

  • ¼ tsp salt (or to taste), optional

    🔪 Instructions
    1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

    2. Add veggies to the baking sheet cherry tomatoes (cut side up), red bell pepper, carrot, zucchini, onion, garlic, and roasted beets — to the sheet.

    3. Drizzle with olive oil, sprinkle with salt and oregano, and toss lightly to coat.

    4. Roast for 25–30 minutes, until tomatoes are soft and lightly caramelized.

    5. Let cool slightly, then transfer everything (including juices!) to a blender.

    6. Blend until smooth and creamy. Taste and adjust seasoning — add more salt, herbs, or olive oil if needed.

    7. Serve immediately or store in a sealed jar in the fridge for up to 4 days, or freeze for later us
